Chocolate Kahlua Dream Cake Recipe

1/2 cup

2 Tb
1/2 cup

Graham cracker crumbs
Finely chopped walnuts
Finely chopped almonds
Granulated sugar
Unsalted butter, melted
Heavy cream
semisweet chocolate, chopped coarse
Light corn syrup
Unsalted butter, cut into pieces

Granulated sugar
Water
Large Egg Yolks
Unsalted butter, softened
Kahlua
Semisweet chocolate, chopped, melted, and cooled

Oven Temp ~ 350°        Baking Time ~ 30 - 35 Min.
Pan Type ~ 9 inch springform pan

Preheat oven and lightly oil a 9 1/2- by 2-inch springform pan.

In a bowl stir together crust ingredients until combined well and press onto bottom of pan. Bake crust in middle of oven 15 minutes, or until pale golden, and cool in pan on a rack.
 In a saucepan heat cream, chocolate, and corn syrup over moderately high heat, stirring occasionally, until chocolate is melted and mixture just comes to a boil. Remove pan from heat and stir in butter, one piece at a time, until smooth. Pour mixture over crust in pan and chill, until firm, about 3 hours.

 In a saucepan cook sugar and water over moderately high heat, stirring occasionally, until sugar is melted. Simmer syrup, undisturbed, until a candy thermometer registers 240°F.

In a bowl with an electric mixer beat yolks until smooth. Add hot syrup in a stream, beating on high speed until thickened and cooled. Reduce speed to medium and beat in butter, a little at a time. Beat in Kahlúa and chocolate until combined well. Spread buttercream over chocolate layer and chill until firm, about 3 hours.

Run a knife around edge of pan and carefully remove side of pan.

Double Mousse Delight Cake Recipe

1/3 cup

 Unsalted butter
Unsweetened baking chocolate
Sugar
Eggs, beaten well
Unbleached flour
Baking powder
Salt
Vanilla

Semisweet chocolate
Strong coffee
Eggs, separated
Coffee liqueur
Heavy cream

Heavy cream, for frosting

Oven Temp ~ 350°        Baking Time ~ 25 - 30 Min.
Pan Type ~ 9 inch square pan

Preheat oven. Grease and flour baking pan.

Set aside. Melt butter and chocolate over low heat or in
the top of a double boiler over hot water. Remove from heat, add sugar and eggs, mix well.

Sift together the flour, baking powder and salt. Stir into the
chocolate mixture. Add the vanilla and pour the mixture into the prepared pan.

Bake until cake is baked but still very moist.
Cool.

Remove the cake from the pan and cut into strips wide enough so they can line most of the sides of a 2-quart soufflé dish or charlotte mold. Cut strips through center to separate into two thinner halves. Line the bottom and sides of dish with the strips. Don't worry about the spacing,
the spaces won't show.

Spoon the mousse filling into the cake-lined dish.
Wrap the dish well, and chill overnight in the fridge or freezer. To serve, first defrost the cake, if frozen. Remove it from the pan, first loosening the sides with a knife, then dipping the pan partly into hot water to loosen the cake so it can be turned out onto a serving plate. Whip the cup of heavy
cream until stiff and decorate top and parts of sides with cream.
Serve in small slices.

Mousse
Melt the chocolate with the coffee over low heat or in top of double boiler over hot water. Remove from heat. Beat the yolks until pale in color, and stir them into chocolate. Stir in the coffee liqueur.
Cool.
Beat egg whites until stiff but not dry. Whip 1/2 c. cream until
stiff. Fold the whites an the cream into the chocolate mixture.

Makes12 servings.

One more, for the lactose and egg intolerant:

Chocolate Chip Cake Recipe
This is a moist delicious cake, it fits well into a life style of a family that has allergies.
This cake is made without eggs or milk.

The chocolate chips can be left out and then it is just a plain cake.

Adding 3 tsp of dry ginger powder makes a ginger cake that is delicious with lemon icing.

1 cup
3/4 tsp
1/2 tsp
1 cup
1 cup
2 Tb
1 tsp
 Flour
Sugar
Baking soda
Sea salt
Chocolate chips
Club soda
Vinegar
Vanilla

Oven Temp ~ 375°        Baking Time ~ 30 Min.
Pan Type ~ 8 inch pans

Preheat oven, grease and sprinkle pan with flour.
Mix the first five ingredients together in a bowl

Make a well in the middle of the dry ingredients
Add the next three ingredients to the dry ingredients and mix well

Pour Batter into prepared pan.
Bake.

Your comments were far more satisfying (and intellectually nutritious) than anything in his regular raft of rancour.

Here's an easy one for the non-cooks!

Cherry Fluff
(I guess you could make Blueberry or Blackberry Fluff the same way...just switch out the pie filling!)

1 can cherry pie filling
1 can Eagle Brand Milk
1 small can crushed pineapple
2 Tablespoons lemon juice
16 ounces Cool Whip
(crushed walnuts to preference)

Mix pie filling and milk till well blended (by hand with spoon...not mixer/blender)

Stir in crushed pineapple and lemon juice.

Stir in Cool Whip and walnuts (if you are using any) till well blended.

Chill in refrigerator for at least an hour.

Yummy summer dessert!

PB and PF sounds a bit too goopy for me...jam/jelly does just fine.  ;)

It's not goopy at all - use cherry jam & go heavier on the actual cherries.  It's really good.

Hah!  I remember fluffernutter!  Even as a kid I questioned how this could be considered "food."  I had a real sweet tooth & drove my mother nuts begging for them (the POWER of advertising to kids!)  I wouldn't admit it at the time, but they just weren't as good as the ads made out and I let my demands peter out pretty quickly.

Another recipe using Eagle Brand condensed milk:

Banoffi Pie

Graham Cracker Pie Crust
2 cans Eagle Brand Milk
2 Bananas
Whipped Cream (or Cool Whip)
splash of coffee
(walnuts if wanted)

Place the cans of milk (unopened, with labels removed) in a large pot. Fill with water till cans are covered by AT LEAST an inch of water.

BOIL for 3 hours
watch VERY carefully...do NOT let water evaporate so much that the cans are exposed (they will explode!)....add water as needed to maintain the inch or more above cans.

Let water cool some then remove cans with tongs and place in refrigerator to cool further (hour or 2)

Open Cans of Milk...you will find that it is now a creamy caramel!

Slice bananas into 'thin coins'.

Place layer of bananas in crust.

Spoon a layer of caramel over them.

*sprinkle with walnuts if you've chose to use them

Repeat till all banana and caramel used.

Stir a splash of coffee in with the container of Whipped Cream until well blended.

Top off pie with Coffee Whipped Cream.

Chill pie till serving!

Enjoy fighting yesterday's battles ad nauseum. You seem to have missed the fact that most of the blogosphere is urging Barack to fight the FISA bill while atill strongly supporting his candidacy. Just because someone told you to shut up doesn't mean we're all clones - but accepting that would mean you'd have to abandon your all-or-nothing mentality. I guess that would be too sophisticated.

Banana Brownie Cake Recipe

1 cup
1/3 cup

1 tsp All-purpose flour
Unsweetened cocoa
Nonfat dry milk powder
Baking soda
Salt
Very ripe banana
Sugar
Egg whites
Buttermilk
Vanilla extract

Oven Temp ~ 350°        Baking Time ~ 25  Min.
Pan Type ~ 9 inch baking pan

Preheat oven to 350. Coat baking pan with vegetable cooking spray.
Combine flour, cocoa, milk powder, baking soda and salt
in bowl. Puree banana, sugar, egg whites, buttermilk and vanilla in food processor until smooth. Add dry ingredients and pulse just until blended. Pour into prepared pan. Bake until toothpick inserted in center comes out clean. Cool on wire rack.

Cut into 2 inch squares.
